1.      Supervises, hires, trains, disciplines and assists in performance evaluations of staff.
2.      Prioritizes, schedules, assigns and monitors work to optimize operational service. 
3.      Ensures timely delivery of meals, snacks and late trays to patients.
4.      Instructs employees in the proper use of equipment and sanitation techniques.  Ensures adherence to established policies and procedures.  Reports malfunctioning equipment to management.
5.      Conducts sanitation inspections for assigned areas as directed.
6.      Participates in departmental Performance Improvement initiatives and recommends changes to work flow and systems as necessary.
7.      Documents meal testing results and resolves unacceptable outcomes.
8.      Oversees catering for special functions including reserving room, set-up and break down.
9.      Investigates customer complaints and reports findings to management.
10.     Responsible for cash control.
11.     Performs related duties, as required.</description>

Preferred Qualifications:  





?         Previous experience in large-scale cooking, knowledge of food preparation, cooking methods and schedules
?         Cash handling experience
 
Duties and Responsibilities:  





?         Maintains clean and safe work environment: Work area cleaned daily; sanitized properly. Spills wiped up immediately, put out wet floor signs. Food/objects on floor picked up immediately. Always follows safe food handling guidelines.
?         Food Preparation: Prep work complete and timely. Prepares food to meet existing standards for quality, freshness, taste and appearance. Wrap, date and rotate items daily; alert supervisor if problem. 
?         Use of equipment: Uses equipment properly and safely. Cleans and sanitizes equipment after use.
?         Food safety: Discards outdated food in a timely manner. Records assigned temperatures daily. Demonstrates good hand hygiene; wears gloves when appropriate. Thaws food per safe handling guidelines. Cools food to standard temperatures in correct timeframe. (Report any food or equipment problems to supervisor). 
?         Maintain stock of food and supplies in caf?: All items set-up (Fruit, bread, pastries, desserts, salad and sandwich bar, beverages) according to standards of food safety. Pull outdated items and take to supervisor. Always complete set-up in time for opening. Replenish food items and supplies as necessary to maintain a continuous supply for customers. Change fountain soda and CO2 containers as needed.
?         Set-up, run and balance cash register: Count drawer before start of shift; tell supervisor if discrepancy. Run register with 90% accuracy. Run register tape at end of each meal ? will have 2 tapes.
?         Perform general cleaning duties: Clean out salad bar at scheduled times. Wipe down and sanitize all counter tops in the serving area. Wipe down all machines, coolers. Wipe and sanitize all tables, seats in caf? during and after each main meal service time. Empty trash as needed. 
?         Other duties as assigned: Demonstrates willingness and follows through with other duties requested.
 
 
Physical Demands and Environmental Work Conditions: 





?         Moderate physical effort (lift/carry up to 40lbs). Frequent, prolonged standing/walking. Subject to burns and cuts. Exposed to hazards of odors, steam, heat, humidity and varying degrees of food service elements.</description>
